My Favorite Holiday Recipes

With the holiday season being absent of the normal Nutcracker performances, I wanted to bring you all of your favorite characters from the beloved ballet! But instead of seeing them on the stage, I’m bringing them to life in the kitchen! Enjoy this mix of recipes that include side dishes, beverages, desserts, and more!

The Mouse King’s Cashew Cheese

Ingredients

-1 cup cashews soaked and drained -sea salt (to taste)
-2 tablespoons nutritional yeast -2 cloves of garlic
-7-10 black and/or green olives -A splash or two of water (to blend)

Directions

-Place all ingredients into a blender or food processor and blend until cheese forms

Spicy Sugar Plum Fairy Dressing

Ingredients

-2 oz plum sauce -1.5 oz Persian lime oil -1.5 oz white balsamic vinegar -1 oz sugar -1/2 oz toasted sesame oil -3 plums, chopped -1 Chile, minced

Directions

-Mix plum sauce, lime oil, and vinegar -Add chiles and sugar. -Add plums and finish with oil

Protein Spanish Hot Chocolate

Ingredients

-4 cups milk of choice -2 tbsp chocolate protein powder
-1/4 cup liquid sweetener of choice
-3 tbsp cocoa powder

Directions

-Heat a small sauce pot on low-medium heat and warm milk -Add protein powder and cocoa powder and whisk until combined -Add liquid sweetener and stir, heat until it’s completely warmed -Serve and enjoy!

Arabian Coffee Crumb Banana Muffins

Arabian Coffee Crumb Banana Muffins

Ingredients

-1/3 cup melted butter -4 ripe bananas, smashed -3/4 cup sugar -1 egg, beaten -1 teaspoon vanilla extract -1 1/2 tablespoons strong coffee -1 teaspoon baking soda -Pinch salt -1 1/2 cups flour -chopped pecans (optional)

For crumb topping:

-1/3 cup packed light brown sugar -1/3 cup granulated sugar -1 tsp ground cinnamon -1/4 tsp salt -2 cup unsalted butter melted, cooled slightly -1.5 cup flour

Directions

-Preheat oven to 350 degrees F -Grease a 12 cup muffin tin or use paper liners -Mix butter into the mashed bananas in a large mixing bowl then add sugar, egg, coffee, and vanilla -Sprinkle the baking soda and salt over the mixture and mix in -Add the flour and pecans, mix until it is just incorporated -Pour mixture into a prepared muffin tin -In a separate bowl, to make crumbs: whisk together granulated sugar, brown sugar, cinnamon, salt and flour. Add melted butter and stir in until it all comes together. Fluff with a fork to make a mixture that resembles coarse crumbs -Top batter with crumbs and bake for 20 to 30 minutes -Let cool and enjoy

Turmeric Chinese Tea

Ingredients

-ground black pepper -1/3 cup liquid sweetener -2 1/2 tsps turmeric powder -lemon

Directions

-Combine turmeric and sweetener until it forms a paste -For a cup of tea, place a teaspoon of your paste into a mug and add hot water and stir until the paste is dissolved -Add a squeeze of lemon and a shake of pepper (this helps with adsorption ) and enjoy

Russian Candy Cane Fudge

Russian Candy Cane Fudge

Ingredients

-1-2 cups crushed candy canes -6oz sweetened condensed milk -2 cups white or milk chocolate chips

Directions

-Line an 8×8 baking pan with parchment paper -Combine milk with chocolate chips in a top bowl of a double boiler over medium high heat and stir until melted -Stir in one cup of canes canes then pour mixture into your pan and smooth it until it’s an even layer -Sprinkle the top with the remaining candy canes (or sprinkles if you prefer) and refrigerate for 2 hours or until hardened in the freezer

4 Ingredient Marzipan

Ingredients

-1 pound almond paste -3 cups powdered sugar (sifted) -2 large egg whites (lightly beaten) -1/2 teaspoon almond extract

Directions

-Chop the almond paste into quarter-size chunks then place into a stand mixer with a paddle attachment -Add powdered sugar and mix at a low speed until a fine sandy texture forms -Add the egg whites until the mixture pulls away from the side of the bowl and forms a ball -Dust a countertop with powdered sugar and knead the marzipan until it makes a a smooth texture with no lumps or dry patches -Use the marzipan or store it in plastic wrap

Cacao Mother Ginger Energy Balls

Ingredients

-1 cup almonds -3/4 cup walnuts
-1/4 cup raw cacao -1/4 teaspoon sea salt
-1 teaspoon grated ginger -1 tablespoons maple syrup -5 dates, pitted -1teaspoon vanilla

Directions

-Place your almonds, walnuts, and cacao into a food processor and blend until fine – -Add the sea salt, ginger, maple syrup, dates and vanilla -Mix everything until smooth and until mixture begins to stick together -Roll into balls -Keep for 3-4 days in the fridge, or 2 weeks in the freezer

Cookie Butter Dewdrops

Cookie Butter Dewdrops

Ingredients

-4oz cream cheese -1/2 cup Biscoff cookie spread -1 cup melted white or milk chocolate -1 package (8.8oz) Biscoff cookies

Directions

– Crush cookies in a food processor until they have become crumbs -Combine cookie crumbs with cream cheese then form into balls -Freeze balls for up to an hour or until firm -Melt chocolate and coat the balls then freeze until chocolate has hardened then Enjoy!

Clara and Her Nut Cracker Candy

Ingredients

-1 tube saltines (about40 crackers) -1 cup butter, either salted or unsalted -1 ⅛ cups light brown sugar, firmly packed -1 bag semi-sweet chocolate chips -1 cup toasted chopped pecans or almonds

Directions

-Preheat oven to 350°F (175°C) degrees -Line cookie sheet with foil & spray with non-stick cooking spray then cover completely with crackers, breaking crackers to fit the end if necessary -In a saucepan, melt butter on low heat. Once melted, add brown sugar and turn heat to medium. Stir until boiling – then boil for 3 minutes -Pour butter and brown sugar over crackers, spread evenly -Put sheet into oven and bake for 5 minutes -Remove sheet then pour chocolate chips over top and place a sheet of foil over top and let it sit and melt for 3 minutes -Spread melted chocolate over the top evenly and cover with nuts -Replace foil and refrigerate until set -Break up into pieces and enjoy
