My Favorite Spring and Easter Recipes

I have really enjoyed sharing some of my seasonal recipes! You all were so excited when I shared my Thanksgiving and Holiday themed desserts, side dishes, and entrees so I’m thrilled to bring Spring and Easter recipes to you! These are a mix of my classic seasonal favorites and they offer both sweet treats but also healthy, delicious side options for a delicious meal!

Odette’s Deviled Eggs


-6 hard boiled eggs, peeled and cut lengthwise -1/8tsp salt -1/4 cup plain Greek yogurt – 2 tsp Dijon mustard -1/4tsp ground black pepper -paprika to garnish


-Remove yolks to eggs and mash them up in a bowl -Add yogurt and mustard, stir to combine -Season with salt & pepper and add mixture into the hollow space of egg whites, garnish with paprika

Odette’s Deviled Eggs

Aurora’s Oven Roasted Asparagus


-1 bunch asparagus, washed and trimmed -3 tbsp olive oil -juice of half a lemon -2 cloves of garlic, minced -3 tbsp grated Parmesan cheese -salt and pepper to taste


-Preheat oven to 425 degrees -Spread asparagus in a single layer in greased baking pan , drizzle with olive oil and season with salt and pepper and toss to ensure asparagus’s evenly coated -Roasted for 8-10 minutes , until tender -Remove from oven and sprinkle with garlic, Parmesan, & lemon juice -Toss and serve

Kitri’s Glazed Carrots


-1lb whole carrots, peeled and chopped -2tbsp olive oil -1 tsp fresh chopped parsley or 1/4tsp dried parsley -1/2 tsp salt -1/4 tsp black pepper -6 tbsp unsalted butter -2tsp minced garlic -1/3 cup honey


-Preheat oven to 425 degrees and grease a rimmed baking sheet -Toss carrots with oil then season with salt and pepper, place in a single layer on baking sheet -Bake for 25mins then broil for 1-2 minutes. -While carrots are baking, melt butter in a sauce pan over medium heat then add garlic, let cook for another minute -Stir in honey, bring to a boil, then remove from heat and stir in parsley -Once carrots are done, pour glaze over carrots and toss to coast completely -Let them cool slightly before enjoying!

Coppélia’s Cream Cheese Frosting

Coppélia’s Cream Cheese Frosting


-8 oz cream cheese at room temperature -1tsp vanilla -1 stick salted butter -1/4tsp almond extract -3.75 cups powered sugar


-Beat cream cheese, butter, & extracts with hand mixer or stand mixer -add sugar gradually and mix slowly until combined -Use frosting to top dessert of choice, especially carrot cake!
